I made this tonight and it was great! The spice blend is spot on. Minor changes – used celery instead of the carrots and added spinach in the end for extra veggies. Served with garlic bread, and skipped the yogurt sauce because I was feeling lazy. Perfectly good without it! I think the soup will taste even better tomorrow.

I wanted to add (for anyone else that might find this useful) that I have to eat a pretty strict low fat (non fat if possible) diet. I made this soup because of your spice blend and because it’s vegetarian. I omitted all but about 2t of the olive oil and added potatoes par boiled in a nice broth, and some chiles de arbol and it was still really flavorful and filling. I cannot express my thanks enough!

Made this. Had 3 large Mason jars of last falls harvest. Tomatoes stewed, garlic, sweet basil and orange and red peppers. 1 jar with 3 cans white northern beans, 1 jar sundried tomatoes. Zest of 1 lime and juice. 1 T white pepper, 3 shakes red pepper flakes. 1 advocodo- pitted, diced. Made as a pre run forsuperb owl. 5 men, 10 c. 2 bags chips. Baked up some sweet potatoes, they scooped it inside. That was phenomenal

It was freezing yesterday (and today, yay leftovers!) in Chicago and I wanted to make a “cold weather” soup that would hit the spot. My husband and I absolutely loved this! It was insanely tasty!! I forgot to put the stock in until the end with the creamer and cheese. Luckily, it didn’t matter. The chicken was still fully cooked and easily shreddable. Used colby jack cheese to have the best of both worlds. This has been added to our “chili and soups” recipe folder. My husband said “add it to the rotation”. Hoping my kids will love some of the leftovers today. Thank you for a wonderful recipe.

This is literally the first comment I’ve ever posted on a recipe, because this dish is a lifesaver! I managed to sneak in the food prep while working from home, and the finished product came together in no time at the end of the day. I doubled the veggies and turkey, tripled the stir fry sauce, and made some slight dietary adjustments – success! I just wanted to say that I stumbled upon your recipe a couple years ago while searching for a salad to take to a family Thanksgiving at my in-law’s house. I married into a VERY competitive family who assigns each person a dish to bring at family gatherings and then everyone votes for their favorite. (The winner gets a trophy they had made specifically for this.) That was the first year and I came in 2nd. Ever since, I can’t tell you how many people have asked me for this recipe because they love it so much. I’m pretty much required to bring it whenever they want a salad now.

I made this recipe tonight after looking for something to go with lamb backstraps. Not only was I impressed with it, but my partner raved about how lovely it was too. This being a bonus.
Unfortunately my avocado was not ripe enough to use, but with the feta and spinach went unnoticed.
Dressing was beautiful and didn’t over do it, just for taste and texture. Can’t wait for leftovers for lunch tomorrow!

Our kids LOVED the flavor and texture of this yummy and cheesy broccoli soup!! They each went back for THIRD helpings, which is quite unusual most dinner nights. And the best part was that this soup was full of veggies and our kids still loved it thanks to the smooth, creamy texture! This soup was definitely a winner for our family!

This had an excellent flavor profile. I halved the chili sauce and it was still a bit too spicy for my youngest. I think next time I’ll double the remaining sauce ingredients and add more chili sauce on an Individual basis. Thanks for such an easy but delish recipe!

This recipe is everything I want–healthy (veggie-based), satisfying, colorful…

I used fregola (Sardinia) instead. Couldn’t find the Israeli pearl couscous. I didn’t come with a packet of flavoring so I used the same cumin and salt from the chickpeas. There’s plenty of flavor in jarred peppers & homemade dressing.

I took out all of the spicy spices for my younger one who can’t yet handle even basic table pepper.

Thanks for the reminders to not add olives or dressing until to eat because of the effects!

I made this broccoli soup the other day as our weather was damp and chilly. OMG, the flavor and thickness was spot on. Since I had extra 1/2 and 1/2 I added that to the soup, wow! I used my immersion blender to cream the soup and was very pleased on the job it did. This is a keeper soup recipe!! Thanks

I made this for an Italian themed Christmas party, and brought home leftovers that my teen/college age girls LOVED. We now make it at least once a week, to have for a meal, to bring to work for lunch, for whatever. Sooooo good. I do not add the avocado, as I did not have it on hand originally, and have only made with canned corn, again what was on hand, but absolutely fabulous. Easy to prepare, too. I usually ask a daughter to cut up some of the veggies while I open up the cans and mix the dressing, so super quick to prepare. Thanks!!!

My daughter asked if I could make her some comfort soup as she was feeling under the weather. I found this soup on your blog and decided this might fit the bill. Boy, did I make a good choice. I of course tasted it before driving the soup to her house. The flavors were so good and recipe was quick to make. The parmesan on top of the hot soup was devine!!! Of course she might have added more than she should but the soup was the perfect thing for someone not feeling 100%.

I made this exactly as directed. I felt it was too thick & needed more flavor so I added more stock and 1/2 c Parmesan cheese (+/- to taste) Huge difference! . I’ll also use Sharp cheddar vs Colby next time. Turned out really good.

These are delicious! Our family tries our best to eat sugar-free and while my toddler enjoys everything, my husband instantly can tell when I bake “healthy”. Nothing taste as good as when it is loaded with sugar right?? Not this time! These taste amazing!! There is no “healthy” taste to these muffins. They just taste darn good! After trying this recipe, my husband thought I made traditional sugared muffins. He was pleasantly surprised to find out these were naturally sweetened. Best muffins ever!
How should I store these? Are they fine left on the counter in an air tight container? Or do they need to be refrigerated?

Yes! You can leave out the cheese. You’ll likely need some extra seasonings to make up for the flavor difference and it will be a bit less thick!

I love this recipe. It has a bit more kick than some other chex mix recipes. I love the Cheez-its in the mix – great flavor. I didn’t have any unsalted butter so I reduced the Seasoned salt and added a bit more garlic, onion, and paprika. The volume of Worcestershire is perfect. I may try smoked paprika next time. Thanks!

This was amazing! I followed everything except for adding the hot pepper & it still had a touch of kick at the aftertaste. You have to make it ahead of time to let all flavor absorb. And the bacon was genius. Cooking the veggies in the greese gave them so much flavor. It is the 1st time I have ever made chilli. And this is the 1st time I ever entered the much coveted chili cookoff at my church & I won 🏆 1st place. There were 7 chilis & 1 comment that was made to me was “when I think of the way chili should taste, this is what I imagined perfectly” that is what I wanted. It was the chili from my childhood made with love & care. If you want to win a contest you better make this chili. Thankyou Chelsea.

I made the Vegetable Beef Soup yesterday, All I can say is OMG ! The flavor was unbelievable and with a couple of changes I did. Used “Smoked Paprika” as that is what I had and think that did it for the flavor!! Also used the fire roasted tomatoes and added Kidney Beans instead of the Peas & Corn. Can’t wait to taste tonight as its sitting in refrigerator I’m sure more flavor will come out. Looks just like the picture and was like a thick stew. Was cold out yesterday and was a Great soup to warm up with ! To make it Gluten Free just use the flour appropriate which I told my friend to use. Highly recommend the Smoked Paprika and fire roasted tomatoes.

I decided to try this couscous soup as I had pearl couscous leftover from another recipe I made. This soup was delicious and sure tasted great especially since the day was cold and raining here. The Curry was the perfect amount and you can not go wrong with Turmeric. A neighbor was getting over a cold so I brought some over to her and she agreed how delicious the soup was.

Made almost as directed. Great recipe and will repeat. I love lentil soup and this is the most flavorful recipe I’ve found in a while. Mine took longer to cook the lentils and veggies (used double Yukon golds as I didn’t have sweet potatoes). I also didn’t have diced or crushed tomatoes but did have a single 28 Oz can of San Marizano tomatoes. I cut them up a little more, as much as I could putting a knife in a glass bowl of them. Anyway, great lentil soup recipe!

Just finished pulling the last batch out of the oven. I questioned them when rolling into balls due to the dough being dry and having to slightly squeeze it into a ball to hold together, despite being short on oatmeal (1 1/3C vs 1 1/2C called for). I did add about 1/3C of Craisins to the mix. They came out great. I rolled into golf ball size +/- balls and cooked for 12 minutes while keeping an eye on them towards the end. 6 to 8 per sheet, they do flatten out as said. I got 2 dozen in total. Tip: if you do not have a food processor for the oat flour, use a coffee grinder as I did. I found a scant 1/4C of oats ground to a full 1/4C oat flour.

This recipe is delicious!!! I used angus stew meat, which was lightly marbled and well worth it, and instead of bouillon cubes I used Better than Bouillion. I set my slow cooker on high for 6 hours because I didn’t have 8 hours before dinner, and the veggies were tender, and so was the meat! Leftovers were enjoyed for two days!! Thank you for this recipe- it’s a new favorite!!!

I’ve made this 5 or 6 times and it’s one of our new regular favorites. It comes together super quickly because of the frozen veggies. I’ve refined the ingredient proportions to our tastes, using one 8-oz package of udon noodles, a full pound of ground turkey, and doubling the sauce. It makes a ton, even without two packages of noodles!

Was looking for a little clarification on the cook time for making a day ahead.
Do you bake for 30min cover with foil and then 35min uncovered and another 10min with cheese like the original recipe. So an 75min cook time instead of the original 45min?

I love him, but my wife doesn’t so I’m gonna try this recipe today. We’re gonna cut back on the jalapeño cayenne paprika and the chili powder. Also, make sure you using a mild sausage, the sausage, and really heat things up.
I’ll let you know how things turn out for my chili as I am planning on tripling the bacon and adding Kabasa to the mix?

I made this soup last night, and my husband gave a foot-stomping response as he took his first bite! It was surprisingly flavorful with more depth of flavor than some beef stews I’ve made. Once again, you have proven yourself as someone whose recipes I can trust to be delicious, and you’ve made the most out of very humble ingredients! (I did sub diced tomatoes for the crushed since my store only had large cans of crushed, and they worked well.). Question: I did not drain the ground beef after browning since your instructions did not mention that, and I was afraid it would be greasy. It seemed to be fine, but I wonder if draining off a bit of that grease next time would hurt the flavor.

I made this with a few adjustments. I sautéed the carrots and potatoes together, not separate. When they were almost done, I removed them from the heat and covered them. I then cooked the chicken to almost done. I added the veggies back in for a few minutes. I added the lemon juice, zest and garlic. Simmered it until the liquid was almost all absorbed. Sprinkled dried parsley on top, as I did not have fresh. It turned out fabulous. Next time I will add less paprika as this was a little spicy. But so good!!

if i may offer a tip – i don’t use nonstick spray, but i smear just a bit of the pudding mixture on the bottom of the pan (literally just a “smear”) to help hold the bottom layer of graham crackers in place when adding the next layer of pudding mixture.

I’m a huge fan and make one of your recipes at least once or twice a week. This lasagna soup might very well be my favorite recipe of yours I’ve made!! another winner. I was looking for something tasty but relatively easy to make on a chilly evening. The flavours melded perfectly. I served the dish with lemon rice – lots to go around! (and yes, it was delicious the next day). I don’t follow a low-carb diet, but this would pair very well with spaghetti squash. Another keeper.

Very good!! I didn’t have time to coat them in chocolate when I first made the dough so after chilling step the dough sat in the fridge for a few days and they were still tasty when I finished making them later. I got 22 balls just eyeballing the size.

Hi Chelsea,
I am from S.E Asia and (Larb), pronounced,( Laahb) is a dish I make quite regularly. It’s really easy to make. My easy , time saving way is to cook and drain the ground beef then, place it in a large bowl and throw in minced garlic, fish sauce, bit of sugar, lime juice, chili flakes , toasted sweet rice powder and toss to incorporate. If it’s on the dry side, just add a little water. Garnish with fresh cilantro and mint leaves. I always cook by eye-balling and tasting as I go so I don’t have written recipes.
I was looking for an easy ground beef recipe and came across your blog and wanted to share how I sometimes make larb.

Hello. Your stuffed shells recipe look good. I found it while searching for make-ahead, freezable shells. I appreciate the info you’ve provided, but I’m confused about your comments regarding not cooking the shells before stuffing and freezing them. Is it possible to stuff uncooked shells? Won’t they just break? I’m guessing you meant that the shells should be cooked (boiled in water al dente), stuffed and frozen, but NOT BAKED in the oven with sauce. Is that correct? Please clarify this. Thank you!

I made this delicious Potato Leek Soup, it is a must try. The weather was damp and chilly outside and I needed to warm up. This is the best soup!! I did not add the white wine vinegar as I did not have that. Not sure if it would make much of a difference as this soup was sooo good without it.

So flavorful, flexible and easy using my Instant Pot! I was out of black beans so used garbanzo beans (chickpeas), which reminded me of hominy in texture, and swapped canned corn for frozen. I also added the lime juice to the whole pot at the end because we love that citrus kick. Definitely adding this tasty tummy-warmer to our regular rotation!

I LOVE quiche & my husband had never had it before so I was excited to make this recipe. The recipe perfectly filled two regular 9” pie crusts (this is what I used instead of one deep dish crust).

My frozen crusts needed more time to pre-bake. I followed the 10 minute at 375° (even though I did two regular pie crusts). The frozen package said to bake for 15 minutes @ 400°, so I think I’ll try longer than 10 minutes next time. I think it would be helpful to know what ‘color’ or texture/appearance the crust should be after the 10 minute bake. It didn’t look done enough to me, but I didn’t want to over-bake knowing the quiche also needed ~40 minutes. I baked mine for 35 minutes but it sunk a little & the crust was a little soft, so I baked it for 5 more minutes.

Instead of Swiss, I used my husband’s favorite cheese, Gouda (yum!). I love Gouda in my eggs! I also used half the onion (just my preference).

The flavor of this recipe was amazing!!! & it was so east! I can’t wait to make this recipe again!

Broccoli Potato soup has become a family favorite. When we have family get together we have some meatless eaters. No one feels slighted with this recipe.
It is perfect today… the weather is frightful!
I add a dash of nutmeg. It seems to freshen all the flavors. I also like to do a 3 cheese blend of cheddar, a little smoky Gouda, and a little Swiss.

This was good! My husband has done keto for the last 6 months, but hit a plateau so I’m migrating him to an endomorph friendly diet to include a few “good” carbs. I substituted riced cauliflower for the rice and used chicken (because I didn’t have tilapia on-hand). It turned out very well! Definitely keeping this recipe!

Made this tonight. Very good, better than my usual bland goulash. The red peppers made a big difference, along with the addition of worcestershire. Unfortunately, I didn’t have the cheese (I usually don’t use) & chili powder or paste. I added the tomato sauce & big can diced tomatoes. It still was very tasty. Next time I’m adding cheese, paste & fire roasted tomatoes.

This salad is amazing! Tastes like an Italian sub. My only issue was the chickpeas. To me they didn’t make sense in the salad and added a gross texture. Next time I make it… and I for sure will, I will leave them out. Otherwise everything about it was perfection.

This is great chili! Made it today and turned out just right. Didn’t put in the jalapeño and used chipotle chili powder instead of cayenne and fire roasted tomatoes so just a hint of spiciness which was just right for my taste buds! This one is now added to our family favorites. I even added the nutmeg. I am not a nutmeg fan but it wasn’t overpowering.

I have made you Mexican Quinoa at least a million times and thought I should rate it and let you know it has become my “go to meal” for any gathering. I was reading through the comments and read that you didn’t feel this would be good on warm for a few hours due to the quinoa getting mushy. I have kept it on warm for hours and even re heated it the next day still tastes incredible. I didn’t mind the mushy mess at all lol. I’m taking it to a potluck tomorrow for work.

Loved this!!! Sautéed 4 strips of bacon chopped and put aside to Cooke the veggies. Added 2 Tbsp flour, 1
tsp of coriander and 1/2 tsp turmeric to the sautéing vegetables. Added bacon, juice of 1 lime, handful of each fresh parsley and cilantro to finish. YUM!

Wanted a nice soup for a cold night and stumbled across this! Didn’t have anything fresh on hand besides potatoes and didn’t have time to run to the store so I tweaked everything quite a bit.

Melted my butter and oil and added some minced onion and garlic powder, tossed in my potatoes and chicken broth (doubled) and cooked as directed. Added in a couple cans of mixed veggies, frozen cauliflower, and 3 packs of ramen, Italian seasoning, more garlic, onion, salt, and pepper. Doubled the roux, milk, and heavy cream, added to soup along with the cheese. Tastes amazing!

This was so delicious! The flavors are my favorite with the sun dried tomatoes, pesto, and parm cheese. I couldn’t find the frozen cauliflower gnocchi so I bought delallo brand dried and used broccoli. I boiled the gnocchi while the sausage and broccoli cooked, for just 3 min. and then tossed it in the remaining spices and sundried tomato oil. Then cooked it 10 more minutes and it was perfect–crispy outside and soft on the inside. This is definitely a keeper–thank you!

If you use a natural peanut butter I’d just make sure it’s really well mixed and not too wet/oily or it will affect the cookies!

So I only made the meatloaf because my kids wanted smashed parmesan potatoes with it but the meatloaf was delicious! I used 1.5 lbs of ground beef because that’s what I had and it was perfect. Grating the onion was kind of a pain (maybe I need a sharper cheese grater?) so I ended up dicing about 1/4 of the onion and I had no issue with raw pieces of onion just fyi. 🙂 Would definitely make again!

I don’t know what I did wrong, but even with extra milk, chicken stock, and sour cream, my tortellini was incredibly dry and chewy. The other component ingredients were fine, but not the noodles themselves.

WHAT A HIT. 10/10 recipe. Our household is obsessed.

Just to share: I didn’t want as big a size as the crumbl cookie sizes, so I just did 1 TBSP of cookie dough. It baked beautifully for about 11 minutes. I also saw a hack of flipping a cup up-side-down to roll of the sides of the cookies. Topped them with little teddy graham cookies. Have already made this recipe twice this week and doubled the batch the second time.

Really good recipe. I chose to leave out the coconut oil and milk altogether for a friend with an allergy. I used an immersion blender just long enough to purée some of the veggies to thicken it. Delish and much fewer calories!

Hi everyone, wonderful recipe. I’ve been making quiche for decades. Always a favorite.
For those having difficulty with pie crust, just omit it. Years back I was cutting carbohydrates for a diabetic family member. I spray the pie plate (glass) with cooking spray, then fill with all the filling ingredients. Be sure to place a sheet pan under pie plate while baking. Quiche is ready when a sharp knife inserted into center comes out clean.

Delicious!! Made a humongous bowl of this for an Italian themed dinner party for 16 people and it was devoured. People had 2-3 servings and when does that ever happen with a salad? It was a little tedious cutting the meats and tomatoes for a salad this large, but I’d still make it again!! Very very good.

Made it! We had ground turkey and naan and trying to figure out what to make for a quick/painless/healthy dinner.
This was a big hit, Dinner approved by 3 relatively picky kids. We didn’t have cucumber, so used bell peppers. Ran out of naan for myself, but had a leftover baked potato- topped with the meat/sauce… Soo good!

Yes! There is a note in the recipe card, it says:

This recipe has slightly changed — it used to be a one pot dish with a special type of pasta that cooked quickly (“pronto” noodles). The company no longer makes the pasta, so I updated the recipe with regular pasta instead. WOW. How are these so delicious???!!!

I skimped a half tbsp of butter (because I am running super low) and that made it so my tall 15-min frozen balls never really went down–they stayed tall. The flavor was still insanely delicious! Next time will use the full butter amount. Thank you so, so much for this perfect and amazing recipe! I’m THRILLED!

The directions clearly say bring to a boil first, THEN cook 15-20 minutes. ” Bring to a boil over medium-high heat, then reduce heat to medium, cover with lid, and cook 15-20 minutes or until the veggies are crisp-tender.” After I let it come to a boil first, like it says, the 15-20 minutes was perfect. I don’t think anyone would expect it to be done in that time starting from normal temp water.

Made this for 6, everyone enjoyed it and there were zero leftovers. Cooked as per recipe, including lime juice, smoked paprika and coriander. I found the rice took longer to cook (gave it an extra 5 minutes and it still had a tiny bit of bite). Would definitely have it again.

So strange, I’m not sure why you had liquid pooling at the bottom. Did you change anything with the recipe? I get the roast beef from the deli too! Maybe try less butter next time (did you only use about 3/4ths the butter mixture or all of it?)

While the basic recipe is good, why are you adding butter, cream, and cheese!
Like the Italian sausage isn’t fatty enough? I was just wanting to find a recipe using Italian sausage because my husband requested it. I just smushed up some of the potatoes to thicken it and added milk as needed. No cream or cheese needs to be involved unless you’re trying to gain weight and clog your arteries! Also used basil and Italian seasoning instead of dried parsley.

I really like the idea and flavor of these. I used some deli roast beef “shaved.” I cooked for the recommended time uncovered, then covered with foil and baked again. Mine really had a liquid in the bottom making the bread very soggy. Should I have used prepackaged meat? Instead of fresh sliced? Overall still would make again, just with hopefully less juice

Excellent recipe! It’s easy to sub veggies or even add a few extras as the seasoning just seems to fit perfectly on everything. We add in broccoli and mushrooms, and shred the brussel sprouts a bit. This and the chicken quesadilla soup recipes are in our regular rotation now.

Maybe consider amending the recipe to call for 4 tablespoons of butter, not 5. This recipe requires a lot of reading and it is very easy to forget that you do not need all 5 tablespoons of butter for the recipe.

Stick to quick oats– you can make them with old fashioned (pulse old fashioned oats in blender or food processor a couple times to break down to the size of quick oats)

Made this with vegan ground “turkey” that I cooked along with the onions, added cornbread biscuits on top and baked at 425 until the biscuits were done (rather than simmering for 30 min), and didn’t bother with the blending; and honestly, this was the BEST chili I’ve ever had. The flavor is incredible, the spice level was perfect for me but would be very easy to adjust for other palettes, and it was just really quick and easy to make. I’ll never use another chili recipe after finding this one.

I’ve only ever made this with plant milk (almond, soy, oat) and it turns out great. I’m sure regular or whole dairy milk would work well.
