I have a lot of green treats on my site related to St. Patrick’s Day, including Leprechaun Bait, these Mint Brownies, or these St. Patrick’s Day Treats), but I realized I don’t have any rainbow-themed treats! So with that, today I’m bringing you a simple and colorful treat: Fruity Pebbles® Rice Krispies® Treats!

I love how these really are the perfect last-minute treat as they take less than 10 minutes to make and don’t require any baking!

How to make these treats

  • Line a pan: these treats are loaded with marshmallows, so you’ll want to make sure to line your pan with parchment paper (or foil in a pinch) so you can easily remove these bars. I love this 9 x 9 Cake Pan for this recipe.
  • Melt the marshmallows: The key here is to melt the marshmallows and butter over low heat and stir constantly so the mixture doesn’t burn or become hard.
  • Flavor enhancements: I add a little salt and vanilla extract to the melted marshmallows. It serves to amp up the flavor of these treats.
  • Add cereal: Last but not least, gently stir in the cereals and load the mixture into the prepared pan. The Fruity Pebbles Rice Krispies Treats will be ready to eat as soon as they’ve cooled to room temperature.

QUICK TIP

When spreading the treats in the pan, you can keep everything un-sticky by spraying your fingers with nonstick baking spray. It really helps! Alternatively, you can use the butter wrapper to spread the mixture.

  • Don’t compress: Once you’ve spread the Rice Krispie mixture into the pan, avoid compressing it too much. Over-compressing the bars will yield brick-hard bars.
  • Low heat: When marshmallows are exposed to high heat, they harden and will make your bars too firm. Keep the heat as low as possible and remove the marshmallows as soon as they’re melted. Stir the marshmallows almost constantly while they are melting.
  • Use fresh marshmallows: The fresher your marshmallows, the softer and more enjoyable your Fruity Pebbles Rice Krispie Treats will be.

Ingredients

  • 5 tablespoons unsalted butter
  • 10 ounces mini marshmallows, (one bag), divided
  • 1/4 teaspoon fine sea salt (if using table salt, use 1/8 teaspoon)
  • 1 teaspoon pure vanilla extract
  • 2 cups plain Rice Krispies cereal (See Note 1)
  • 4 cups Fruity Pebbles cereal

Instructions

  • Line a 9×9-inch pan with parchment paper with an overhang for easy removal. Spray parchment paper with cooking spray. Set aside.
  • In a large nonstick pan, melt the butter over low heat. Once the butter is completely melted, add in all but 2 and 1/2 cups (120g) of the marshmallows. Stir constantly, keeping the heat on low, until the marshmallows are completely melted.
  • As soon as the marshmallows are just melted, remove the pan from the heat. Stir in the salt and vanilla extract. Next, stir in the Rice Krispies and Fruity Pebbles cereals very gently. Stir in the reserved 2 and 1/2 cups marshmallows. Stir until combined.
  • Pour the mixture into the lined and prepared pan. Lightly spritz your hands with cooking spray and gently (do not press hard/compact or you'll get hard bars) press the bars evenly into the pan.
  • Allow the bars to cool and set up before using the overhang to pull the bars out and cut them into squares. Bars are best enjoyed the same day.

Note 1: You can use all fruity pebbles instead of the Rice Krispies/Pebbles mix, but I found it to be a little too sweet. Plain Rice Krispies aren't highly sweetened, while Fruity Pebbles are.

    1. I’ve never tried halving it but it should halve nicely. I’d just be sure to add it to a smaller pan!

    I made them tonight and they were delicious! I loved the idea of mixing normal rice crispies with the fruity pebble ones. It makes it not so sweet. Will definitely be making this again!

  13. Going to make these tomorrow! Pardon the dumb question, but is the 2nd half of marshmallows supposed to melt when added in to the mixture?

    1. Not dumb at all! Some melt and some partially melt so it just makes for a nice texture in the treats!
