Let’s Chat Puff Pastry

  • Puff pastry, also known as pâte feuilletée, is a delicious type of pastry made from layers of butter and dough. When baked, it creates a flaky and light texture that is hard to resist. It may remind you of the many layers in a croissant.
  • You can find it in the frozen food aisle of most supermarkets (near desserts) and it comes in sheets that you can cut and shape as desired. It’s made with butter, flour, and water. Some brands may also include additional ingredients such as milk, eggs, and sugar.
  • While homemade is always a great option, store-bought puff pastry offers tremendous convenience. It saves time and effort compared to the involved, multiple-day process of making your own puff pastry. Because it’s so versatile, you can use it in both sweet and savory dishes and it can be frozen for up to a year.
  • It’s important to note that when using store-bought puff pastry, follow thawing and baking instructions carefully to achieve the desired texture and appearance.

QUICK TIP

We love using store-bought puff pastry in a variety of our recipes, both sweet and savory! For savory options, we use it as the crust for Broccoli Cheddar Pot Pie or Ham and Potato Pot Pie. And for sweet treats, it’s the perfect base for recipes like Cronuts, Toaster Strudels, and Apple Turnover. With its flaky and light texture, puff pastry adds a delicious touch to any recipe it’s a part of.

Process steps: place the hearts layered with Nutella together; make slits around, leaving the center intact; twist each slit; proceed all the way around the heart.

How To Make A Puff Pastry Heart

  • Roll out the puff pastry on a lightly floured surface.
  • Cut out a heart shape with a knife (either free hand it or use this printed heart shape as a guide).
  • Repeat process with the other sheet of puff pastry.
  • Spread the Nutella generously on one cut-out heart shape, leaving a little border around the edges. Place the other cut out heart on top.
  • Make 1-inch slits around the heart keeping the center intact.
  • Twist each slit and gently press down to the tray.
  • Brush the pastry with an egg wash and sprinkle with sugar.
  • Bake in a preheated oven until it is puffed and golden brown.
  • Meanwhile, make the icing by whisking together powdered sugar, milk or heavy cream, tiny pinch of salt and vanilla extract until smooth.
  • Once the puff pastry heart is cooled, drizzle the icing over it.

Process shots of the puff pastry heart: brush an egg wash over the heart; sprinkle with sugar; bake.

Recipe Tips

  • Keep the edges sealed: Be sure to leave a little border around the edges when spreading the Nutella in the center of the puff pastry heart. This will help keep the chocolate inside the pastry as it bakes.
  • Brush with egg wash: Before baking, brush the Puff Pastry Heart with an egg wash. This will give it a nice golden color and help the sugar stick.
  • Be mindful of baking time: Keep an eye on the heart while it’s baking. As soon as it starts turning golden brown, take it out of the oven to prevent over-baking.
  • Let it cool before icing: Wait for the puff pastry heart to cool down before icing it; otherwise, the icing will melt and lose its consistency.
  • Experiment with flavors: Feel free to experiment with different fillings such as jams, chocolate spread, or even cheese for savory variations.

STORAGE

For optimal taste and texture, enjoy this Puff Pastry Heart on the day it’s made or within two days. Leftovers should be stored in an airtight container or wrapped in plastic wrap and kept at room temperature. To refresh dry leftovers, warm them in a 350°F (175°C) oven for a few minutes.

Ingredients

  • 1 sheet (13.2 oz.) puff pastry dough thawed, but very cold
  • 1/3 cup Nutella
  • 1 large egg, plus 1 tablespoon water
  • 2 tablespoons white granulated sugar
  • white sparkling sugar (or additional white sugar--Note 2)

Icing

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • Optional: tiny pinch of salt, 1/2 tsp vanilla, red food coloring, sprinkles

Instructions

  • PREP: Follow package instructions for thawing the puff pastry dough. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • CUT: Take one piece of store-bought puff pastry, lay it out on a lightly floured surface, and slice it in half. Using a very sharp knife, cut out a heart shape from one half of the pastry (either free hand or with our printed heart guide). Repeat the process with the other half of the puff pastry.
  • SHAPE: Spread about ⅓ cup of Nutella on one of the heart-shaped cutouts, leaving a small border around the edges. After spreading the chocolate spead, take the other cutout and place it on top, sandwich style. Using a knife, make 1-inch slits around the edge of the heart shape, being careful not to cut through the center. The slits don't have to be perfect, so don't stress about it. Embrace the rustic look here! Take each slit and twist it, then gently press the ends down onto the baking sheet.
  • EGG WASH: In a small bowl, whisk together 1 large egg and 1 tablespoon of water to create an egg wash. Use a pastry brush to generously brush the heart with the egg wash (you won't use it all). Sprinkle white sugar and a small handful of sparkling sugar over the pastry until it's evenly coated. Place the pastry in the freezer for 15 minutes to chill.
  • BAKE: Bake the pastry in the preheated oven for 18-22 minutes, or until it is puffed and golden brown. While the pastry are baking, make the icing by mixing together powdered sugar, milk, a pinch of salt, and vanilla extract. Add food coloring if desired. Once the pastry is done baking, remove from the oven and let cool for 5 minutes. Drizzle the icing over the pastry, and enjoy while still warm!

Recipe Notes

Note 1: Puff Pastry: I take one 13.2 ounce piece of puff pastry. If you have a package containing two smaller pieces, use both for this recipe instead of dividing it. Puff pastry dough can be found in most supermarkets in the frozen food section, near desserts. It is important to carefully follow the package thawing instructions when using store-bought puff pastry, to ensure proper baking.
Note 2: White sparkling sugar: This is a coarser sugar that adds a lovely crunch! If you don't have it, just use a touch more regular sugar instead.
Nutrition information is based on using 1/3 cup of Nutella per pastry heart. Numbers are for the whole pastry heart, not for each individual slice.

Wow! This was so good I couldn’t stop eating all of it. I liked how light and fluffy the pastry was and how it didn’t taste too sweet or sugary. I also liked the presentation. New favorite for me!
