A fully loaded deep-dish skillet cookie (Pizookie) with the absolute-best cookie dough, Reese’s candies, chocolate chips, and M&M’s!

This recipe includes directions for making this deep-dish cookie in a cast iron skillet or a 9-inch cake pan. Top it with plenty of ice cream and even some hot fudge if you’re feeling extra decadent.

Pizookie recipe inspiration

When my husband and I were going to college we found a little dessert cafe that quickly became our favorite place. The cafe is in a remodeled historic mansion (built in 1909) which makes for a fun ambiance. They served all kinds of from-scratch desserts, but we never did end up trying all that many while we lived near the cafe. However, it wasn’t from lack of going there often enough; it was from our fear of branching out because we both knew their “cazookies” (also known as pizookies) would never disappoint.

Massive deep-dish cookie skillets with a generous serving of ice cream on top is what the name “cazookie” entailed. The first time we went, we each got one and quickly learned they could easily be shared with three or four other people.

We ended up graduating from college and moving a few hundred miles away from that little dessert cafe, but I knew one day I’d make my own version of that deep-dish cookie recreation. And honestly, we couldn’t be more thrilled with the result. These Pizookies are a total favorite in our home; they’re sweet and indulgent and completely loaded with our favorites: chocolate, M&M’s, and Reese’s. 

 

So what exactly is a Pizookie?

Pizookie is a hybrid word combining pizza and cookie.  It’s perfect for those days when you need a pizza-sized cookie!

Pizookie is actually a registered trademark with BJ’s Restaurants and Brewhouses, but is also featured in many other restaurants. This copycat recipe is less about one particular restaurant’s dessert and more about the concept of deep-dish cookie treats. We’re very respectful of trademark laws.

Typically, pizookies are made in a cast-iron skillet, but this recipe has also been tested in a 9-inch round cake pan if you don’t have a skillet!

How to make a Pizookie

Much like making a small batch of cookies, you make a Pizookie the same way! You start with whipping up the cookie dough (But don’t use just any cookie dough recipe — not all dough bakes well in a skillet). Press the dough into a greased skillet and bake.

For my Pizookie recipe, we separate the dough into two parts and add halved Reese’s candy in between the two layers of cookie dough. I mean, talk about a treat! The Reese’s get all melty, with a chocolatey-peanut-buttery center which is unbelievably delicious. We add the remaining dough with M&M’s and chocolate chips added in… because we’re either going big or going home with this dessert.

Once everything is in the skillet, you’ll bake it for 20-25 minutes. You’ll want to eat it pretty quick after being baked because it’s still slightly gooey in the center (what I consider the hallmark of a perfect Pizookie!). Last, but not least, we add a few scoops of ice cream for good measure. You may just never go back to regular cookies again. 

Recipe variations

  • If you aren’t a fan of Reese’s, you can use virtually any chocolate candy for the middle of this Pizookie (or leave it without a center filling altogether). Some other candies we’ve tried and loved include Rolos®, coarsely chopped Kit-Kats®, Hershey’s® chocolate bars.
  • Leave out the M&M’s entirely or swap them out for more chocolate chips!
  • Swap out the milk chocolate for semi-sweet, dark, or white chocolate (or use a combination of a few different chocolate chips).
  • Add a drizzle of hot fudge or melted peanut butter on top of the fresh-from-the-oven Pizookie.

Recipe tips

  • Use room temperature butter: If the butter is too soft or melted, the cookie dough will end up being too warm and not baking properly. The dough burns on the edges before the center is done.)
  • Watch bake time closely: Pizookies should be somewhat gooey and fairly soft-baked in the center. As soon as the edges turn a light golden brown, the Pizookie is ready!
  • Enjoy these treats fresh out of the oven: Nothing beats serving them hot with some ice cream on top. If you do have leftovers, they will store okay (without the ice cream and hot fudge), but nothing compares to the cookie right out of the oven!
  • Speaking of leftovers, store any leftover Pizookie at room temperature, covered tightly with plastic wrap. This excludes Pizookies that were topped with ice cream; once topped with ice cream, they won’t store well. Even if the ice cream is scraped off, whatever melted into the cookie will make it soggy.

QUICK TIP

When measuring flour for this deep-dish skillet cookie, make sure to spoon and level the flour. If you press a measuring cup into a container and push the flour into the cup, you’ll end up with way too much flour. Here’s how to spoon and level flour.

How many calories are in a Pizookie?

Short answer: a lot! Nobody’s going to try and pass this off as health food…. especially in this one that’s packed with M&M’s, chocolate chips, and miniature Reese’s cups. It’s got quite a bit packed into a cookie! But if you’re sharing with a lot of people, it ends up having comparable calories to most desserts. For 1/6 of a Pizookie, it comes to just over 900 calories. Different candies will affect that number, of course.

Ingredients

  • 1/2 cup (113g) unsalted butter, at room temperature
  • 1/2 cup (111g) white granulated sugar
  • 1/4 cup + 1 tablespoon (66g) light brown sugar, lightly packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups (193g) white all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 10-12 miniature Reese's cups, unwrapped and cut in half
  • 1/2 cup (90g) milk chocolate chips
  • 1/2 cup (96g) peanut butter or regular M&M's candies (2 small packages)
  • Optional toppings: ice cream, hot fudge sauce

Instructions

  • PREP: Preheat the oven to 350 degrees F. Lightly grease or spray a 9-inch cast iron skillet or 9- inch cake pan. Set aside.
  • CREAM BUTTER and SUGARS: In a medium-sized bowl, cream the room-temperature butter (See Note 1), white sugar, and brown sugar for about 2-3 minutes. Add in the egg and vanilla. Mix until combined.
  • DRY INGREDIENTS: In a separate bowl, stir together the flour (See Note 2), baking soda, baking powder, and salt.
  • COMBINE: Add the dry ingredients to the wet and mix until a dough forms. Do not over mix.
  • DIVIDE DOUGH: Divide the dough in half. Press one half of the dough into the bottom of the skillet or cake pan. Press the unwrapped and halved Reese's cups on top of that layer of cookie dough.
  • REMAINING DOUGH: To the remaining cookie dough, add in the milk chocolate chips and peanut butter M&M's. Stir to combine and then press that remaining cookie dough on top of the Reese's cups and smooth the dough into 1 even layer. The Reese's cups should be covered with dough.
  • BAKE: Bake for 20-25 minutes or until the edges are light golden brown. Remember, the center should be a little softer -- this is the hallmark of a delicious Pizookie!
  • SERVE: Serve immediately with ice cream and hot fudge if desired.

Note 1: Butter: Use room temperature butter. If the butter is too soft or melted, the cookie dough will end up being too warm and not baking properly (it will burn on the edges before being baked in the center).
