TikTok Baked Oats

TikTok Baked Oats are a viral sensation -- blend up oats with a few other ingredients and bake it into a cake-like breakfast full of good-for-you ingredients! Today we're sharing four different versions of TikTok oats -- a plain version (jazzed up with fresh berries!), double chocolate, chocolate peanut butter, and chocolate chip cookie.

Equipment

Ingredients

Plain

  • 1/4 cup cashews roasted and lightly salted
  • 1/4 cup + 2 tablespoons old-fashioned oats
  • 2 tablespoons melted coconut oil
  • 1 large egg
  • 2 tablespoons milk (plant-based or dairy milk)
  • 3 tablespoons pure maple syrup
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • Topping ideas: fresh berries, chia seeds, drizzle of maple syrup

Chocolate-Chip

  • 1/4 cup cashews roasted and lightly salted
  • 1/4 cup + 2 tablespoons old-fashioned oats
  • 2 tablespoons melted coconut oil
  • 1 large egg
  • 2 tablespoons milk (plant-based or regular milk)
  • 3 tablespoons pure maple syrup
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • 1 tablespoon miniature chocolate chips
  • Topping ideas: additional chocolate chips, drizzle of maple syrup

Chocolate

  • 1/4 cup cashews roasted and lightly salted
  • 1/4 cup + 2 tablespoons old-fashioned oats
  • 2 tablespoons melted coconut oil
  • 1 large egg
  • 2 tablespoons milk (plant-based or regular milk)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dutch-process cocoa powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • Optional: 1 tablespoon miniature chocolate chips

Chocolate Peanut Butter

  • Same ingredients as in "chocolate" but add a spoonful of nut butter and a sprinkle of extra chocolate chips on top!

Instructions

  • PREP: Preheat the oven to 350 degrees F. Generously grease 8-ounce ramekins with cooking spray and set aside. (See Note 3 if you only want to make one serving.)
  • PLAIN VERSION: In a blender, combine all the ingredients in the order listed until smooth, about 90-120 seconds. There shouldn't be any chunks of oats or nuts. (Blend again if needed.) Use a 1/3 measuring cup to evenly divide the batter into prepared ramekins (only putting 1/3 cup of mixture in each ramekin). Transfer prepared ramekins to a baking sheet and bake for 20-22 minutes or until a toothpick comes out clean or with moist crumbs when inserted into the center. The cake shouldn't look gooey on top. Remove and top with toppings of choice and enjoy promptly!
  • CHOCOLATE CHIP VERSION: In a blender, combine all the ingredients in the order listed EXCEPT the chocolate chips. Blend until smooth, about 90-120 seconds. Use a 1/3 measuring cup to evenly divide the batter into prepared ramekins (only putting 1/3 cup of mixture in each ramekin). Notes

Note 1: Blender: This recipe is quick and easy to make, but you do need a good, powerful blender (think Blendtec® or Vitamix®) to break down the cashews and oats into a smooth mixture. We love this mini “Twister” jar for this recipe since there isn't a whole lot of batter that it won't blend as easily in a larger jar.
Note 2: Ramekins: 8-ounce ramekins are a must-have for this recipe. Unfortunately, these baked oats won't turn out the same in different-sized ramekins.
Note 3: Baked Oats Recipe For One: Only bake one cake at a time. Transfer the rest of the batter to an airtight container and store in the fridge until ready to use. The batter stores nicely in the fridge for 5-7 days. Give the leftover stored batter a quick stir before adding to ramekins.
